Roasted Sweet Potatoes with Butter, Maple Syrup, and Bourbon

These decadent roasted sweet potatoes are rich in both vitamins A and C and have less fat and sugar then the typical sweet potato casserole.

Prep Time: 5 | Cook Time: 45min | Total Time: 50min | Yield: 10-12

Ingredients:

  • 3 Tbsp. butter, melted, divided

  • 3 Tbsp. maple syrup

  • 2 Tbsp. Bourbon

  • 1 tsp. bourbon vanilla extract

  • 2 lbs. sweet potatoes, peeled and sliced 1/4” thick or cut in cubes

  • Salt and pepper to taste

Instructions:

  1. Preheat oven 350 degrees.

  2. Combine 1/2 melted butter, maple syrup, Bourbon, and vanilla in a bowl. Set aside.

  3. Spread sweet potato, evenly one layer, in a greased 9x11 Pyrex or greased baking sheet lined with foil. Add salt and pepper to taste.

  4. Coat or brush the layer of sweet potatoes with the remaining 1/2 of melted butter.

  5. Bake until golden on the outside and tender on the inside, about 45 minutes. While cooking, brush with butter, maple syrup, Bourbon mixture and toss every 15 minutes. (To expedite cooking, pre-cook cut sweet potatoes in the microwave in a microwavable dish for 8 - 12 minutes).
