Schnitzel

Chicken Schnitzel is a traditional Central European recipe consisting of thin, pounded chicken breast that is breaded and pan fried, creating a deliciously crispy coat.

Serves: 4 Prep time: 5 min. Cooking time: 8 min. Total time: 15 min.

Ingredients:

4 or 1 pound boneless, skinless chicken breasts, thinly sliced, pounded

1 egg, beaten

Himalayan salt

Freshly ground pepper

1/2 cup bread crumbs (Kroger GF traditional bread crumbs)

1/4 cup Parmesan Romano cheese, grated, optional

2 Tbsp. olive oil

Fresh Italian parsley, chopped, for garnish

Instructions:

 1.     Place the chicken breasts between two sheets of plastic wrap and pound them until just 1/4 inch thick with the flat side of a meat tenderizer.

2. Beat egg in a plastic bag, add chicken breasts, and coat with beaten egg.

3. In a separate plastic bag, add salt, pepper, bread crumbs, and cheese. Add chicken and shake to cover thoroughly.

4. Heat 2 Tbsp. olive oil in a large non-stick skillet over medium heat. Add the chicken and cook 4 minutes on each side, until cooked through and golden brown.

5. Transfer chicken to a platter. Garnish with parsley and serve.
