Grilled Peach Salad

This fresh Grilled Peach Salad is perfect for a summer gathering or picnic. It combines the sweetness of grilled peaches with a mix of savory greens. Grilling the peaches caramelizes their natural sugars, enhancing their sweetness and adding a smoky flavor.

Ingredients:
Salad:
4 peaches, ripe but firm
Olive oil for brushing the peaches
5 oz. mixed greens
3 scallions, chopped
½ cup feta cheese, crumbled
¼ cup almond slices, toasted
Dressing:
2 Tbsp. olive oil
1 Tbsp. white balsamic vinegar
1 tsp. honey
½ tsp. Dijon mustard
Salt and pepper to taste
Instructions:
Combine dressing ingredients in a Mason jar. Seal Mason jar with the lid and shake vigorously. Set aside.
Preheat grill to medium- high heat and oil the grill grates.
Cut peaches along the natural line coming from the stem of the peach until you hit the pit in the center, at cut in half in this direction by rotating it around the knife. Separate each half and remove the pit. Then cut each half into 2 – 3 thick wedges.
Brush the sliced peaches with olive oil on both sides. Grill each side for 2 – 3 minutes, undisturbed to allow grill marks to develop. Use a thin spatula to lift the peach from underneath to preserve the grill marks. Once ready, set aside on a plate.
Toast almond slices over low-medium heat in a small pan for 1 – 2 minutes. Toss mid-way and watch closely.
Assemble salad on 4 salad plates: Add mixed greens and scallions, top with crumbled feta, toasted almond slices, and grilled peaches. Drizzle with prepared dressing to taste. Enjoy!
