Pumpkin Bread

Pumpkin bread is a quick bread made with pumpkin puree and a warm blend of spices like cinnamon, ginger, and cloves.  It is a favorite fall and holiday treat and can be enjoyed simply plain or with added pecans, walnuts, or raisins.    

Prep Time: 15min | Cook Time: 45min | Total Time: 1hr | Yield: 12 slices

Ingredients:

  • 1/4 cup butter

  • 1/2 cup sugar

  • 1 beaten egg

  • 1 cup Libby’s pure pumpkin puree

  • 1 tsp. vanilla extract

  • 1 1/2 cups flour

  • 1 tsp salt

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 cup pecans, chopped (optional)

Instructions:

  1. Preheat oven to 325°.

  2. Beat butter and sugar until smooth.

  3. Add beaten egg, vanilla, and pumpkin puree. Mix together.

  4. Mix dry ingredients together. Then, add to wet ingredients. Combine well and mix in pecans.

  5. Add mixture to a greased baking loaf pan.

  6. Bake for 45 minutes.

  7. Enjoy!
