Roasted Baby Bella Mushrooms and Asparagus

Always need veggies in some form on my plate! This easy, tasty recipe complements chicken, fish, or tofu, rice or pasta for a vegan meal.

Yield: 4 cups

Prep time: 5 minutes Cook time: 15 minutes Total time: 20 minutes

Ingredients:

·       1 lb. Baby Bella mushrooms, wash and cut in quarters

·       1 lb. asparagus, wash, cut ends off, cut into 1 inch pieces

·       2 Tbsp. olive oil

·       Lawry's seasoning to taste

Instructions:

1. Preheat oven to 375°F.

2.  Put vegetables into a Ziploc gallon bag, shake with olive oil and seasoning.

3. Spread onto a foiled and greased sheet pan with sides. Roast in the oven for 15 minutes, tossing vegetables midway.

4. Enjoy with your favorite main course of chicken, fish, or tofu, rice, or pasta for a vegan meal.
