Strawberry Kale and Pistachio Salad

This springtime recipe combines simple fresh ingredients for a delicious, sweet and savory salad.  You can change up this salad with a mix of berries or replace the strawberries with blueberries, add avocado, use walnuts, almonds or pecans, and swap out kale for spinach or baby greens.  You can make it a main course meal by adding beans or quinoa or chicken.

Prep Time: 10 minutes Total Time: 10 minutes

Ingredients:

Salad;

7 oz. kale, chopped and massaged

2 cups strawberries, sliced

½ cup pistachios

Salt and pepper to taste

Dressing:

1 clove garlic chopped

1 Tbsp. olive oil

Juice of 1 Meyer lemon

1 Tbsp. white balsamic vinegar

1Tbsp. maple syrup

2 Tbsp. water

Salt and pepper to taste

Instructions:

  1. Combine salad ingredients.  Note massaging the kale softens the greens and reduces some of the bitterness in the leaves.

  2. Mix dressing and toss into salad mixture.

  3. Serve and enjoy.
