This fresh, flavorful, and colorful salad is packed with black beans, grilled corn, crisp bell peppers, avocado, and a tangy homemade dressing. It makes a perfect side dish or served with chips as a party appetizer at a summer potluck or game day, or simply over grilled fish, chicken, tofu, or salad for an easy dinner.

Prep Time: 20 minutes Total Time: 20 minutes

Ingredients:

Salad:

·        2-15 oz. black beans, rinsed and drained

·        4 Roma tomatoes, seeds removed and diced

·        1 red bell pepper, diced

·        1 yellow bell pepper, diced

·        1 cup grilled corn, can substitute for Trader Joe's frozen grilled corn

·        1/2 cup red onion, diced

·        1 jalapeno pepper, seeds removed, diced into very small pieces

·        1/3 cup cilantro, chopped

·        2 avocados, pitted and diced

·        1 lime, juiced

·        Tortilla chips for serving

Dressing:

  1. ·        1/3 cup olive oil

  2. ·        2 Tbsp. white balsamic vinegar

  3. ·        1 clove garlic, minced

  4. ·        1 tsp. honey

  5. ·        Add salt and pepper to taste

Instructions:

1. In a large serving bowl, combine beans, tomatoes, peppers, corn, onion, jalapenos, and cilantro. Add fresh lime juice.

2. In a small bowl or Mason jar, whisk together olive oil, white balsamic vinegar, garlic, honey, and salt and pepper.

3. Pour the dressing over the salad mixture and stir until well combined.

4. Cover and refrigerate for 30 minutes so the flavor marinates.

5. Top with avocado. Serve with tortilla chips or over your favorite fish, chicken, tofu or salad.
